Bee a Matador Honey
‘Bee’ amazed by our award-winning raw, local honey! It takes on fruity and herbaceous profiles depending on the time of year when the bees feed on seasonal blooms within and surrounding CSUN’s Botanic Garden and Orange Grove. Bee a Matador’s wildflower honey is extracted from beehives in the small apiaries maintained by Rachel Mackelprang, associate professor of biology at California State University, Northridge. Professor Mackelprang is conducting research on the bees with the help from CSUN biology students and collaborates harvesting the honey with the Marilyn Magaram Center in Thieriot Laboratory (Sequoia Hall 112).
Bottled up in every jar of Matador Marmalade there are fresh Valencia oranges harvested from CSUN's orange grove to enhance dishes from breakfast to dinner. Two years ago, in a progressive effort to move toward sustainability, CSUN’s Marilyn Magaram Center for Food Science, Nutrition and Dietetic student interns handpicked the oranges, formulated the original recipe, and carefully crafted the label from the name to the design to represent school spirit. However, the oranges have a deeper rooted history on campus as in the late 1950's CSUN was established on the orange grove. Some of the original trees from the 1940's still remain today to produce juicy oranges to deliver a sweet citrus-packed sustainable condiment generated by student, for students, to add to the university's great legacy. Try what CSUN's president calls "magnificent!" and taste the history of our oranges!

Consumer panels gauge the acceptability of food products using state-of-the-art sensory analysis software, Compusense five. The Marilyn Magaram Center provides sensory evaluation and analysis for informational purposes only, and is not a licensed certification facility.
The ServSafe® Food Protection Manager Certification is a food safety management training and certificate program. Some food industry employers are requiring ServSafe® certification from their employees.
