Join us for our Rainbow Cooking Series: Cucumber Shrimp Canapés

Cucumber Shrimp Canapés Recipe
Ingredients:
- 3/4 cup lemon juice
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1 tsp black pepper
- 1 large cucumber
- 1 lb uncooked shrimp, peeled and deveined
- 2 tbsp unsalted butter
- 8 oz non-fat plain Greek yogurt
How-to:
- In a bowl, mix lemon juice, garlic, salt and black pepper until blended. Pour the marinade into a large bowl. Add shrimp and stir to coat. Cover and refrigerate for 40 minutes.
- After 40 minutes, cook shrimp in a non-stick pan with unsalted butter until they turn pink.
- Cut each cucumber into 1/4" thick slices. Pipe greek yogurt onto each cucumber slice; top with cooked shrimp.
