Cucumber Shrimp Canapés Recipe

Ingredients:

  • 3/4 cup lemon juice
  • 4 garlic cloves, minced
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 large cucumber
  • 1 lb uncooked shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 8 oz non-fat plain Greek yogurt

How-to:

  1. In a bowl, mix lemon juice, garlic, salt and black pepper until blended. Pour the marinade into a large bowl. Add shrimp and stir to coat. Cover and refrigerate for 40 minutes.
  2. After 40 minutes, cook shrimp in a non-stick pan with unsalted butter until they turn pink.
  3. Cut each cucumber into 1/4" thick slices. Pipe greek yogurt onto each cucumber slice; top with cooked shrimp.
