Joyce GilbertDr. Joyce Gilbert, RD research interest is aimed at health disparities related to obesity. As the Executive Director of the Magaram Center and Associate Professor in the Department of Family and Consumer Sciences we have developed a number of community outreach projects focusing on underserved and minority populations in the area of obesity prevention and intervention.  In addition, we recently began conducting studies aimed at examining nutrition education intervention that is culturally appropriate to Hispanic communities.  This research combines the use of nutrition education and food safety information combined with a multitude of Community partners to help consumers make healthy food choices, and takes a multi-disciplinary approach to understanding environmental barriers to good health in underserved populations. Currently, the Center includes 6 graduate and 5 undergraduate students, all of whom are funded by our grants.
