Healthy Meals on a Budget: Techniques to Create Quick, Affordable, Healthy Meals

This workshop will cover an explanation of the MyPlate guidelines and what makes up a healthy meal. We will be distinguishing the difference in price and nutrient composition between different food packaging and processing options. We will also evaluate the different cooking tools available to make quick meals. Lastly, we will discuss quick and healthy meal options at the grocery store that are affordable. This will lead into a fun cooking demo where we will be making a delicious vegetable omelet. 

Recipe and Supplies Needed: 


  •  4 large eggs
  • 2 Tbsp olive oil or other vegetable oil (or cooking spray)
  • ¼ cup shredded cheese (any kind)
  • Pinch of salt and pepper to taste
  • 1/4 cup spinach
  • ¼ cup red pepper
  • ¼ cup yellow onion

What you'll need

  • 1 medium bowl to beat the eggs
  • 1 small bowl for vegetables
  • 1 small bowl for cheese
  • Medium frying pan
  • 1 Measuring cup
  • Fork or whisk
  • Spatula
  • Shredder
  • Plate
