Recipe: Moroccan Lentil and Vegetable Stew

Ingredients:

  • 2 Tbsp olive oil
  • 1 yellow onion
  • 4 cloves garlic, minced
  • 4 ribs celery
  • 1/2 Tbsp ground cumin
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 15oz. can chickpeas
  • 1 28oz. can diced tomatoes
  • 1/2 Ib. frozen cauliflower florets
  • 6 cups vegetable broth
  • 1 cup red lentils
  • 1 bay leaf
