The following wines will be presented:

2003 Aquinas Napa Valley Chardonnay - Light straw color with very rich, vanilla oak aromas with peach and creme brulee tones that linger. The palate is lush with Meyer lemon, light caramel, jasmine and sweet papaya flavors.

2002 Aquinas Napa Valley Merlot - The 2002 growing season showed an early Spring frost followed by an uncommonly warm Summer. Noting several hot spells the season did finish with a number of cooler, milder weeks, all this leading to a selected harvest. Our Merlot has been assembled from special cool slimate vineyards within the Napa Valley. This Merlot is medium plum color, with very intense aromas of blackberry, cocoa and cranberry. The palate opens with white pepper, cassis and rich black cherry notes. The long finish is supple with lingering boysenberry and wild strawberry flavors.

2003 Aquinas Napa Valley Cabernet Sauvignon - Medium plum and brick red hue with intense wild huckleberry and sweet cherry concentrate. The palate is full with dark fruits like cranberry, black cherry and intense cassis, which finishes with supple oak tannins, integrated vanilla and sublte cinnamon spice.

The following wines will be presented:

2002 Saddlerock Chardonnay - It boasts a pale straw color with aromas of green apple and citrus. Layers of lemon, apple, pear and spice delicately caress your whole mouth, while a dash of vanilla leads to a crisp finish.

2000 Semler Cabernet Sauvignon - Intense fruit with black currant, cassis and chocolate. Opulent tannin structure with a graceful finish.

Firestone Pale Ale - Firestone Pale Ale offers a rich, crisply hopped character with a medium malt profile. Nuances of toffee and vanilla unfold across a bright, clean texture. Dry hopping establishes an assertive American hop aroma and flavor.

2002 Merlot, Santa Ynez Valley - Our 2002 Merlot offers a luxurious bouquet of black cherry, nutmeg, and fine tobacco. The black cherry impression continues on the palate, along with vivid flavors of plum and juniper berry. Accents of clove and mocha accompany full tannins on a smooth, lingering finish.

2004 Sauvignon Blanc, Santa Ynez Valley - Our 2004 Sauvignon Blanc hails from our estate and neighboring vineyards in Santa Barbara County's Santa Ynez Valley, which is recognized as one of the worldÕs premier appellations for the varietal. It begins with zesty aromas of guava, grapefruit and honeysuckle, followed by bright flavors of passion fruit and melon with accents of lemongrass. Crisp acidity uplifts the fruit into a clean, quenching finish.

2004 Riesling Vineyard Select, Central Coast - Crafted in the classic off-dry style, our 2004 Riesling boasts bright honeysuckle and orange blossom aromas. Crisp flavors of apricot, pear and citrus unfold with lively mineral accents across a full-bodied texture. A subtle sweetness is balanced by firm acidity for a refreshing finish.

The following wines will be presented:

2002 Pinot Blanc Reserve, Monterey (CA) - Soft and dry, with a fruity nose. A rare french varietal that will compliment seafood or fowl as well as cheese and fruit.

2000 Sauvignon Blanc, Santa Barbara (CA) - Grapes hand-picked. Gold in color with a greenish hue, this clean, light-bodied Sauvignon Blanc exhibits crisp melon and dried herb aromas. It features creamy herb flavors leading to a hint of buttery oak character on the finish. Serve with cheese, pasta, seafood, or poultry.

2003 Chardonnay Reserve (CA) - Fruity medium body wine. It features apple flavors and a crisp acidity. Serve with cheeses, pasta, seafood, or poultry.

2003 Cabernet Franc Reserve, Lodi (CA) - Intense bouquet with hints of blackberry and cherry. Flavors of ripe berries and vanilla make this complex body wine the perfect accompaniment to salmon, tuna, poultry, or exotic meats.

2002 Carignane Reserve, Monterey (CA) - This medium dry, fruity Merlot-like wine is a real crowd pleaser. Refined taste of raspberry, blackberry, and a pleasant earthy component introduce a lush, flavorful palate. The finish lingers with hints of spice. A superb Carignane made in the French tradition. Serve with turkey, pork., lamb, or beef.

Lady In Pink, (CA) - This is her night. Watch your steps. She leads and you follow. She is sweet. This blush fruity wine is for her. Serve chilled with hors d'oeuvres, grilled chicken, salads, or appetizers.

2004 Muscat Canelli, South Coast (CA) - Spicy and balanced with a fresh and fruity bouquet. This wine boasts a unique character of unsurpassed excellence. Serve with cheeses, fruit or salads. ORGANICALLY GROWN.

2004 Muscat Canelli (Late Harvest), South Coast (CA) - Full, round and supple wine which tastes nearly like nectar. A great accompaniment to most desserts, but unbeatable as a solo performer! ORGANICALLY GROWN.

Surrender (Chocolate Port) - It is when we Surrender to the power and the long-lived beauty of the mind without regards to the short-lived physical beauty that we experience satisfaction. Surrendering to pains may be the ultimate satisfaction. After all, we need Forgiveness to Surrender to Passion. Port like wine with natural flavors of chocolate, strawberry and vanilla. Au Plaisir!!

The following wines will be presented:

2002 Western Australia Cabernet Merlot: This classic Western Australian blend has aromas of plum, blackberry, and violet. On the palate, it is intense and concentrated, with herbal black berry accents. Soft tannins lend a velvety smoothness, creating layers of flavor and a long, lingering finish.

2002 Western Australia Cabernet Sauvignon 2002: Vibrant purple in color, with ruby red highlights, this Cabernet displays excellent varietal character, with minty blackcurrant aromas nicely accented by spicy oak. Similar flavors follow thThis shiraz has the region's typical pepper and blackberry flavors combined with the supple tannins from 12 months aging in American and French oak.

2001 Western Australia Shiraz 2001: This shiraz has the region's typical pepper and blackberry flavors combined with the supple tannins from 12 months aging in American and French oak.

2002 Western Australia Merlot: Deep purple in color, this Merlot has aromas of violet, plum, and smoky vanillin oak. On the palate, it boasts ripe berry fruit with supportive but supple tannins, and a smooth, velvety finish.

2003 Santa Maria Valley Pinot Noir - A blend of our Santa Maria Valley Vineyards - Bien Nacido, Dierberg and Solomon Hills. This is our door-opener, our ambassador, our out-of-town crier; a bold wine that delivers depth of fruit and aromatic complexity.

2003 Bien Nacido Vineyard Pinot Blanc - With less weight than Chardonnay, but with ample fruit and a focused finish, this is one of our favorite food wines. You can dress it up with shellfish or serve it around the picnic table like we do.

About Tantara Winery

Since 1997, Tantara has been dedicated to producing the very finest Pinot Noir and Chardonnay. Located on the beautiful Bien Nacido Vineyard in Santa Barbara County, our wines are vineyard designated from Central Coast growers such as Bien Nacido, Talley, Pisoni, Gary's, Laetitia and Dierberg.

In addition to our two acres of Bien Nacido G Block Pinot Noir, in 1999 we planted ten acres of Pinot Noir and two acres of Syrah which will bring our own vineyard holding to about fourteen acres when these new plantings come on-line in 2005. This fruit will then make up our estate bottling.

Because of our commitment to detail and the finite amount of fruit that meets our standards, total production will be 5,000 cases.

2003 Cargasacchi Jalama Vineyard pinot noir-- From Santa Barbara County winegrower Peter Cargasacchi's newest vineyard about seven miles from the ocean, this cool climate site produces intense flavors with a long hangtime. This is our most elegant offering, showcasing the beautiful, earthy aromatics and lingering, velvety finish for which the Mt. Eden clone is famous.

2003 Garys' Vineyard pinot noir --This Santa Lucia Highlands vineyard is co-owned and farmed by Gary Franscioni and Gary Pisoni and is prized for its award-winning bottlings made by the roughly 18 producers sourcing fruit from their 42 acres. Good acidity and structure make this a superb wine that will benefit from aging.

2003 Solomon Hills Vineyard pinot noir-- From a Santa Maria Valley vineyard just off Highway 101 owned and farmed by the Bien Nacido Vineyard family, this succulent wine is a blend of two distinct clones and displays the delightfully spicy and powerful characteristics from this region.

Cases Produced: 125 Suggested Retail Prince: $36

2003 Rancho Ontiveros Vineyard pinot noi--From the southern-most end of the Santa Maria Valley comes our prized wine for 2003. Winegrower James Ontiveros harvested this fruit, a blend of three different clones, at under one ton per acre, producing an amazingly dense, spicy, extracted and very limited wine that will sell fast.

2004 French Camp Vineyard petite sirah (barrel sample)--From a vineyard nestled in the heart of mountain lion country 20 miles east of Paso Robles comes this thick, velvety, silky and seductive wine with hints of dark chocolate that will arouse all the senses.

Waltzing Bear Wines is a new artisan winery located in Santa Maria dedicated to making small lots of ultra-premium wines. Our initial focus has been central coast pinot noir with plans to make our first petite sirah this fall.
