Jessica Beckmann
Team Captain
Jessica Beckmann will graduate from ASU in May with a BS in Nutrition/Dietetics and a BA in Spanish Linguistics. She was born and raised in Northern Colorado but loves the entire Southwest! She hopes to start a dietetic internship in California or Arizona in the fall. As an RD, Jessica plans to work with Spanish-speaking patients both in the US and abroad, as part of medical missions. However, Jessica's interests within nutrition shift depending on what she is studying at the moment, so it's anyone's guess if she will end up working in clinical nutrition, public health or food service. In her free time, she likes baking, traveling, and checking out local restaurants.

Jaime Valencik

Jaime Valencik began her undergraduate career on a full academic scholarship from Arizona State University in 2007. It took her a few years to realize that nutrition was where her education was going to lead her and is excited to be applying for graduate school this spring where she hopes to continue her studies in nutrient metabolism and nutrition research. She is also actively involved in the local dance community, teaching at a dance studio and choreographing for local conventions.

Ashlee Bartine

Ashlee Bartine is graduating in May from Arizona State with a degree in dietetics. She is currently active in the field providing nutrition education at a mental health clinic. Aside from her classwork, Ashlee enjoys baking for friends and family and walking with her dog, Peppers.

Christy Appel
Faculty Coach
Christy Appel is a Registered Dietitian and lecturer in the School of Nutrition and Health Promotion at Arizona State University. Christy earned her doctoral degree in Physical Activity, Nutrition, and Wellness from ASU, where her research focused on the use of functional foods such as vinegar and pickle juice products for improving blood glucose control as well as vitamin C supplementation and weight loss. Dr. Appel currently teaches courses in food science and advanced macronutrient metabolism to undergraduate and graduate students in the Nutrition Program at ASU. When she’s not teaching, you’d probably find her cooking, hiking, or just trying to keep up with her 3 year-old-daughter, Chloe!
